What Does it Mean to Eat Low-Carbon?


A "low-carbon diet" is a worldwide effort to collectively reduce our carbon footprint by minimizing carbon dioxide and other greenhouse gas emissions. Food production accounts for about one third of green house gas emissions via the steps it takes to get to your table (production, processing, & packaging).

Consumption of local and seasonal foods is key to a low-carbon diet for you and your family.  It can also mean limiting the consumption of meat, dairy, and processed foods.  The industrial production of these products involves heavy green house gas and fossil fuel emission.


Eating low-carbon reduces the number of food miles4 that food travels to get to you.  You can do this by buying local ingredients close to the source.  Food has such a huge impact on the environment and your family's health.  Eating less processed food is a great first step to a healthier environment and a healthier family.
